Ever since the days of my 2-hour one-way train commute to Manhattan, I have been a HUGE fan of sarahontheroad.com.  Following her journeys in Nunavut province in Canada’s Far North, inspired as I slugged through my 3-year plan to relocate to Colorado.

Wasn’t ’til my move however, did I reach out and actually comment [on her blog] — and later it was Sarah who advised me ‘how’ to blog online.  Lotta initial e-learning required when launching a website.  Sarah assured me that regular folks could develop their own site – that an IT degree wasn’t required.  AND her love of blogging was contagious.  If Sarah could do it, I could journalize my ‘life-2nd half’ too!

While logging in multi-hours on sarahontheroad.com, I’ve been enthralled/hooked on Sarah’s Northern Light photo blogs – and of course anything/everything Inuit.  What a ROCKSTAR life journey!  HOWEVER, gotta think a downside of life in the Arctic (if there is one) is the ever diminishing daylight hours during winter season.

So…what better way to lift a fellow blogger’s spirits than to ship a ‘care’ package – and what gal doesn’t like chocolate?

‘Tech up’ was the phrase I coined in January…

then I dropped cable & my cell phone on February 15th (part of my LIVE SIMPLY mantra).  LOL>

What better way to stay in touch & expand my non-existent Friday night calendar than a Lasagna Bake via FaceTime.

SUPER fun idea coming from a guy who doesn’t cook.  The key is to buddy up with someone who does cook 🙂

 

Barilla No-Boil Lasagna

Servings: 12

1 (9 ounce) box of barilla no-boil lasagna noodles
2 eggs
1 (15 ounce) container ricotta cheese
4 cups shredded mozzarella cheese
1/2 cup parmesan cheese (optional)
1 lb ground beef or 1 lb sausage, browned
spaghetti or pasta sauce
parsley (to garnish)

Directions:

1  Preheat oven to 375.
2  In bowl, combine beaten eggs, ricotta cheese and TWO cups of the mozzarella cheese and parmesan.
3  If you choose not to use the parmesan, just add more mozzarella.
4  Set aside.
5  In a 13X9X3 pan, spread 1 cup of sauce on bottom of pan.
6  Layer in the order, 4 uncooked lasagna noodles (they will overlap), then 1/3 part of the ricotta cheese mixture, half the browned meat, 1 cup mozzarella cheese, and 1 cup of spaghetti sauce.
7  Next layer, 4 uncooked lasagna noodles, 1/3 part of the ricotta cheese mixture, and 1 1/2 Cups sauce.
8  Next layer, 4 uncooked lasagna noodles, remaining ricotta mixture and remained meat, 1 cup of sauce.
9  For top layer, 4 uncooked lasagna noodles, remaining sauce, and remaining 1 cup mozzarella.
10  Bake covered with foil for 50-60 minutes.
11  Uncover and continue cooking until all the cheese is melted on the top (about 5 minutes).
12  Let stand 15 minutes before serving.
13  If you are using a 13X9X2 pan—just make 3 layers to avoid boiling over.
